By poisoneyes | January 27, 2008
Ingredients:

* 50 g caster sugar
* 125 g strawberries, hulled and chopped, plus extra to garnish
* 2 tsp black peppercorns, crushed
* Juice of 1 small lemon
* 600 g beef stock
* 100 g unsalted butter
* 4 beef fillet steaks
* 1 tbsp olive oil
* Salt
Method:
1. Cook the sauce and strawberries, with a squeeze of lemon juice, in a pan for about 10 minutes until the mixture has the consistency of thin jam. Sieve then allow to cool.
2. In a large non-stick frying pan toast the peppercorns until they are aromatic. Pour in the stock, then add the butter and boil to reduce by half. Stir in the strawberry mixture and the rest of the lemon juice then reduce to a rich sauce consistency.
3. Meanwhile, heat a ridged grill pan over a high heat. Brush the steaks with oil and sprinkle with salt. Cook for 2-3 minutes each side for pink and up to 5 mins each side for well done.
4. Serve immediately with the sauce and some freshly cooked vegetables. Garnish with strawberries.
