Mango and cumin lassi

3/4 teaspoon cumin seeds
1 1/4 cups (10 oz/300 g) plain yogurt
1 1/4 cups (10 fl oz/300 ml) nonfat milk
1 ripe mango, peeled, pitted and chopped
superfine (caster) sugar to taste
crushed ice, for serving

Place cumin seeds in a nonstick pan over medium heat and toast until aromatic, 1-2 minutes. Remove from pan and allow to cool.

Place 1/2 teaspoon cumin seeds, yogurt, milk and mango in a food processor and process until thick.

Sweeten to taste with sugar. Place a handful of crushed ice into each glass. Pour lassi over ice. Serve immediately, sprinkled lightly with remaining cumin seeds.

This cool, refreshing drink is ideal for serving with or after a spicy meal.

Serves 4.
